Ingredients

Zucchini Cornbread Casserole
  • 2 zucchini grated and squeezed dry
  • 1 box (8.5 oz) corn muffin mix
  • 1 can (14.75 oz) cream-style corn
  • 1 cup frozen corn kernels thawed
  • 2 eggs large
  • 0.5 cup sour cream
  • 0.25 cup butter melted
  • 1.5 cup shredded cheddar divided
  • 2 green onions sliced
  • 0.5 tsp salt

Equipment

  • 1 sheet pan

Method

Prep and mix
  1. Preheat your oven to 350F and grease a 9x9-inch baking dish. Set it up so the casserole can go in right after mixing.
  2. Whisk the eggs, sour cream, and melted butter until smooth. The mixture should look uniform and glossy.
  3. Stir in the corn muffin mix, cream-style corn, corn kernels, zucchini, 1 cup cheddar, green onions, and salt. Mix just until no dry pockets remain, and look for evenly distributed zucchini and corn.
  4. Pour the batter into the greased dish and spread it level. Sprinkle the remaining cheddar evenly over the top so it melts into a golden layer.
Bake and finish
  1. Bake at 350F for 40-45 minutes, until golden and set in the center. Look for a browned top and a center that no longer jiggles when the pan is nudged.
  2. Cool the casserole for 10 minutes before slicing. This brief rest helps it firm up for clean squares.

Notes

For the best texture, squeeze the grated zucchini very dry so the casserole bakes up instead of turning watery. Store leftovers covered in the refrigerator for up to 4 days; reheat in the oven or microwave until warm. Freezing is not recommended because corn and zucchini can soften after thawing. Dietary swap: use low-fat sour cream and reduced-fat cheddar to lower calories while keeping the same bake.
