Whipped ricotta base
  • 4 sourdough bread Thick slices, toasted
  • 1 cup whole milk ricotta
  • 1 tbsp honey Plus more for drizzling
  • 0.5 tsp vanilla extract
  • 1 salt Pinch
Topping
  • 1 fresh berries (strawberries, raspberries, blueberries)
  • 1 crushed pistachios or walnuts
  • 1 extra honey For drizzling
  • 1 fresh mint leaves (optional)
  • 1 lemon zest

Method
 

Whip the ricotta
  1. Beat the whole milk ricotta, honey, vanilla extract, and salt with a hand mixer (or in a blender) for 2–3 minutes until light, fluffy, and cloud-like.
Toast and assemble
  1. Toast the thick sourdough slices until deeply golden and crispy.
  2. Spread a generous, thick layer of whipped ricotta on each toast.
  3. Arrange fresh berries across the surface of each toast.
  4. Drizzle generously with extra honey, scatter crushed pistachios or walnuts, add lemon zest, and finish with fresh mint leaves if desired—serve immediately.

Notes

Pro tip: whip the ricotta while the toast is browning so it stays airy; if using blender, scrape down once to keep the texture uniform. Store any leftover whipped ricotta in the fridge up to 3 days (toast toppings are best fresh). No freezer—berries may become watery and soft when thawed. For a dairy-light swap, use part-skim ricotta while keeping the same whipping time for a similar cloud-like texture.
