Ingredients
  

Chicken and seasoning
  • 4 boneless skinless chicken breasts
  • 2 tbsp Cajun seasoning or steak seasoning Use enough to season generously on both sides.
Searing and sauté base
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 onion Thinly sliced.
  • 2 cloves garlic Minced.
  • 8 oz cremini mushrooms Sliced.
  • 0.25 tsp salt To taste.
  • 0.25 tsp pepper To taste.
Cheese and deglazing
  • 8 slices Monterey Jack cheese
  • 2 tbsp Jack Daniel's whiskey or chicken broth For deglazing.
Garnish
  • 1 fresh parsley

Equipment

  • 1 cast iron skillet
  • 1 sheet pan

Method
 

Sear the chicken
  1. Season the chicken generously with Cajun seasoning; heat olive oil in an oven-safe skillet over medium-high until shimmering, then sear chicken for 5-6 minutes per side until golden and the internal temperature reaches 165°F. Remove the chicken to a plate.
Caramelize onions
  1. In the same pan, melt butter and cook the sliced onions over medium heat for 8-10 minutes until deeply caramelized. Scrape up browned bits as the onions darken.
Sauté mushrooms and deglaze
  1. Add sliced mushrooms and minced garlic and cook for 4-5 minutes until golden. Deglaze with Jack Daniel's whiskey or chicken broth, then season with salt and pepper.
Smother and broil
  1. Return the chicken to the pan and top each breast with the mushroom and onion mixture. Lay 2 slices of Monterey Jack over the top of each breast.
  2. Broil for 2-3 minutes until the cheese is melted, bubbly, and golden. Keep an eye on the broiler to avoid over-browning.
Finish and serve
  1. Garnish with fresh parsley and serve immediately. Plate so the mushroom and onion blanket is visible under the cheese.

Notes

Pro tip: Use an oven-safe skillet so you can go straight from stovetop sear to broil without moving the chicken. Refrigerate leftovers in a sealed container for up to 3-4 days; reheat gently in the oven or skillet until warmed through. Freezing is not recommended due to texture changes in the mushrooms and cheese. For a lighter option, replace Monterey Jack with reduced-fat cheese while keeping the same cooking steps.
