Ingredients

Cranberry sauce base
  • 12 oz fresh cranberries
  • 0.75 cup granular monk fruit or allulose sweetener Use one sweetener option (monk fruit OR allulose).
  • 1 cup water
  • 1 tsp orange zest
  • 0.5 tsp ground cinnamon
  • 1 salt Pinch.

Equipment

  • 1 Dutch oven

Method

Boil and dissolve sweetener
  1. Bring the water and granular monk fruit or allulose sweetener to a boil in a saucepan, stirring until fully dissolved, about 2-3 minutes. Visual cue: the mixture should look clear and actively bubbling in the center.
Cook until berries burst
  1. Add the fresh cranberries, ground cinnamon, and salt to the boiling liquid, stirring to combine. Visual cue: the cranberries should move freely and start to darken as they heat.
  2. Simmer the mixture for 10-12 minutes, stirring occasionally, until the berries burst and the sauce thickens. Visual cue: you should see broken berry skins and a spoonable texture that coats the back of a spoon.
Finish with orange zest
  1. Remove from heat and stir in the orange zest, then taste and add more sweetener if needed. Visual cue: the sauce should look glossy with visible zest flecks.
Cool and chill
  1. Cool the sauce to room temperature, then chill before serving. Visual cue: it will thicken further once cold and become a spoonable, set sauce.

Notes

Pro tip: for the thickest consistency, simmer until the mixture coats the spoon—then avoid overcooking after removing from heat, since it will continue to thicken as it cools. Refrigerate in a covered container up to 5 days; for best texture, stir once after chilling before serving. Freezing isn’t recommended due to texture changes after thawing. For a dairy-free and vegan-friendly option, this recipe already fits; keep it vegan by using only plant-based sweeteners (monk fruit/allulose are plant-derived).
