Ingredients

Sauteed green beans base
  • 1 lb fresh green beans Trimmed.
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic Thinly sliced.
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp sliced almonds Toasted.

Equipment

  • 1 cast iron skillet

Method

Blister and cook the beans
  1. Heat the olive oil in a large cast iron skillet over medium-high heat until shimmering. Add the fresh green beans and cook 6-8 minutes, tossing, until blistered and crisp-tender with bright green color.
Brown garlic
  1. Reduce the heat to medium, then add the butter and thinly sliced garlic to the skillet. Cook 1-2 minutes, stirring, until the garlic is golden and fragrant with a light sizzle.
Season and finish
  1. Season with salt, black pepper, and red pepper flakes, then toss to evenly coat the green beans with the spices. Add the lemon zest and lemon juice and toss again just until the beans look glossy.
  2. Add the toasted sliced almonds and toss once more. Serve immediately while the almonds are crunchy.

Notes

For the best blistering, keep the skillet hot (medium-high for the first cook) and avoid overcrowding—use a large skillet or cook in two batches. Store leftovers in an airtight container in the fridge up to 3 days; reheat briefly in a hot skillet to revive texture. Freeze is not recommended for crisp-tender beans. For a dairy-free option, use olive oil instead of butter or substitute vegan butter with a similar fat content.
