Preheat and prep
- Preheat oven to 350°F and grease a 9x5 loaf pan.
- Let the pan stay greased while you mix the batter so the loaf releases cleanly.
Mix the batter
- Whisk melted butter, sugar, eggs, and vanilla into mashed bananas until smooth and glossy.
- Stir in well-drained crushed pineapple until evenly distributed.
- Fold in all-purpose flour, baking soda, baking powder, and salt until just combined with no visible dry streaks.
- Fold in sweetened shredded coconut and roughly chopped macadamia nuts.
Bake
- Pour the batter into the prepared loaf pan and sprinkle extra coconut and macadamia nuts on top if desired.
- Bake for 60–70 minutes at 350°F until a deep golden color forms and a toothpick comes out clean.

Pro tip: drain the crushed pineapple very well, then mash bananas thoroughly for a thicker batter that bakes into a moist, sliceable crumb. Store tightly wrapped at room temperature for 2 days or refrigerate for up to 5 days. Freeze wrapped slices for up to 2 months—thaw overnight in the fridge. For a dairy-light swap, use plant-based butter in the same amount and melt it before whisking.
