Ingredients

Goat cheese appetizer base
  • 1 goat cheese log Form matters: keep as a log for clean topping coverage.
  • 0.3333333 cup fig jam Use for a glossy, spoonable layer.
  • 0.3333333 cup pecans, roughly chopped Rough chopping keeps crunch in each bite.
  • 1 tbsp butter To toast and bind the pecans.
  • 1 tbsp brown sugar Helps lightly candy the nuts.
  • 1 tbsp honey Adds sweetness and shine at the end.
  • 1 tsp fresh rosemary, finely chopped Finely chopped distributes flavor.
  • 0.0625 flaky sea salt Use sparingly to finish.
  • 1 crackers and sliced pears for serving Serve alongside for scooping and topping.

Equipment

  • 1 sheet pan

Method

Make candied pecans
  1. Melt butter in a small skillet over medium heat, then add pecans and brown sugar. Stir to coat so the sugar clings to the nuts.
  2. Toast for 3-4 minutes, stirring, until pecans are fragrant and lightly candied. Transfer to a sheet of parchment to cool.
Assemble and serve
  1. Place the goat cheese log on a serving board. Keep it centered so the toppings run down the sides.
  2. Spoon fig jam over the top, letting it run down the sides. Aim for a glossy coating that covers most of the log.
  3. Scatter candied pecans and rosemary over the jam. Press gently so they adhere slightly to the sticky surface.
  4. Drizzle with honey and sprinkle with flaky sea salt. Serve immediately with crackers and sliced pears.

Notes

Pro tip: cool the pecans fully before topping to prevent the jam from thinning too much. Refrigerate leftovers in an airtight container for up to 3 days; warm toppings are not recommended after chilling. Freezing isn’t recommended because the goat cheese texture can soften. For a gluten-free option, serve with gluten-free crackers.
