For the bread
  • 1.75 cup flour
  • 1 tsp baking soda
  • 1.5 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 1 can (15 oz) pumpkin
  • 0.75 cup sugar
  • 0.5 cup brown sugar
  • 0.5 cup oil
  • 2 eggs
  • 1 tsp vanilla
  • 0.25 cup buttermilk

Method
 

Prep and pan coating
  1. Preheat your oven to 350F. Brush a 9x5 loaf pan with melted butter and coat with a generous layer of cinnamon sugar so the crust clings to the sides and top.
  2. Whisk the bread dry ingredients until evenly combined. Look for a uniform color with no visible spice or soda pockets.

Assemble and swirl

Bake and cool
  1. Bake for 60-65 minutes at 350F. The cinnamon sugar should form a caramelized crust with a golden-brown look.
  2. Remove the loaf from the pan while still slightly warm. Cooling in the pan can cause sticking, so loosen promptly for clean slices.
