  • 1 bag (32 oz) frozen tater tots Use straight from the freezer; spread in a single layer for best crisping.
  • 8 eggs Scramble until just set so they stay tender after topping.
  • 8 bacon Cook until crisp, then crumble for even bites over the tots.
  • 1.5 cup sharp cheddar Shred for faster melting.
  • 0.25 cup jalapeños Slice; add more or less for heat.
  • sour cream Add dollops after baking so it stays creamy.
  • green onions Slice and sprinkle on top right before serving.
  • hot sauce Serve as an extra drizzle for heat.
  • salt Season eggs to taste.
  • black pepper Season eggs and tots to taste.

Method
 

Bake the tater tots
  1. Preheat the oven to 425°F and spread the frozen tater tots in an even layer on a sheet pan. Bake for 20–25 minutes until deeply golden and crispy, pausing once to check for even browning if needed.
Scramble the eggs and season
  1. Crack the eggs into a bowl and scramble in a pan just until set. Season with salt and black pepper to taste so the eggs stay soft under the toppings.
Load the tots
  1. When the tots are crispy, top them with the scrambled eggs, bacon crumbles, and shredded cheddar. Distribute evenly so each bite gets egg, bacon, and cheese.
Melt the cheese
  1. Return the sheet pan to the oven and bake or broil for 2–3 minutes until the cheese is fully melted and bubbling at the edges. Watch closely so the tots don’t over-brown.
Finish and serve
  1. Top with sliced jalapeños, sour cream dollops, sliced green onions, and hot sauce. Serve immediately while the tots are at their crunchiest.

Notes

For maximum crunch, use a single layer of tots and don’t overcrowd the sheet pan. Store leftovers in the fridge up to 3 days; reheat in a 425°F oven to re-crisp (microwave softens them). Freezing is not recommended because the eggs and sour cream toppings change texture. For a lighter swap, use turkey bacon and reduce cheddar to 1 cup while keeping the egg and jalapeños the same.
