Ingredients

Sweet potatoes and aromatics
  • 3 lb sweet potatoes
  • 1 onion
  • 4 garlic
  • 1 tbsp fresh ginger
  • 4 cup broth
Creamy spiced finish
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp cayenne
  • 1 orange Juice only.
  • 0.01 salt To taste.
  • 0.01 pepper To taste.
  • 0.5 toasted pepitas For serving.
  • 0.5 cream For serving (swirl).

Equipment

  • 1 Dutch oven
  • 1 cast iron skillet

Method

Sauté aromatics
  1. Heat 2 tablespoons olive oil in a large pot and sauté the diced onion for 5 minutes, until softened and fragrant (visual cue: translucent edges).
  2. Add the minced garlic and grated ginger, then cook for 2 minutes (visual cue: aromatic, not browned).
Bloom spices
  1. Stir in the cinnamon, nutmeg, and cayenne and cook for 1 minute (visual cue: spices darken slightly and become fragrant).
Simmer until tender
  1. Add the broth and cubed sweet potatoes, then simmer for 25-30 minutes until very tender (visual cue: potatoes break apart easily with a spoon).
Blend and finish
  1. Blend the soup completely smooth with an immersion blender (visual cue: no visible chunks; texture becomes velvety).
  2. Stir in the coconut milk, maple syrup, and orange juice, then return to a gentle simmer (visual cue: small bubbles around the edges).
  3. Season generously with salt and pepper (visual cue: taste-balanced flavor).
Serve
  1. Ladle into bowls and top each with toasted pepitas and a swirl of cream (visual cue: bright orange soup with creamy streaks).

Notes

For extra silkiness, blend in short pulses while the soup is hot, and keep it at a gentle simmer after blending so it stays smooth. Store in the refrigerator up to 4 days; reheat gently on the stove and add a splash of broth if it thickens. Freezing is yes, though the coconut milk may separate slightly—stir or re-blend after thawing. If you want a dairy-free topping, swap the cream swirl for extra coconut milk warmed with a teaspoon of maple syrup.
