Equipment

  • 1 sheet pan
  • 1 mini muffin tin

  2. Roll the puff pastry lightly and cut into 24 squares, then press each square into a muffin cup.
  3. Place a cube of brie in each cup, then top each one with 1 teaspoon whole berry cranberry sauce.
  4. Sprinkle the chopped pecans over each bite.
Bake and finish
  1. Bake for 13-15 minutes at 375F until the pastry is puffed and golden and the brie is melted.
  2. Cool for 5 minutes in the tin, then drizzle with honey.
  3. Garnish with fresh rosemary sprigs.

Notes

For the cleanest cups, keep the puff pastry cool until you press it into the tin, and try not to overfill so the tops puff evenly. Store leftovers in the fridge up to 3 days in a covered container. Freezing is not recommended because the puff pastry texture softens after thawing. If you want a simple swap, use a dairy-free brie-style substitute to keep it vegetarian without changing the method.
